Hawaii law requires green coffee to be dried to 9% - 12% moisture. It can be surprisingly difficult to meet this narrow range. Too dry and the coffee loses quality, too wet encourages mold. Proper use of a well calibrated moisture meter is important.
Bring your moisture meter and we'll help you calibrate it to state standards. We will discuss the basics of how moisture meters work, have several types of meters to compare and have calibrated parchment available for testing. Bring your own parchment to see if your meter measured it correctly. Don't have a moisture meter or need a new one? This is the perfect opportunity to try out different models.
